How to clean your catch

Are you bringing the fish you catch home for dinner?   Althought the NYS Department of Health has issued a health advisory on eating some species of Lake Ontario fish (advisory guidelines are listed in the fishing regulations publication you receive when you purchase your NYS fishing license), you can reduce your consumption of contaminates by 15  to 65% by following two important guidelines:
  1. When cleaning the fish, remove the skin and all fatty areas such as the laterial or "mud" line and belly flap since these contain the most contaminates.
  2. When cooking the fish, use a method that allows fish juices and fat to drip away, such as baking on a rack or grilling.  Avoid pan frying the fish or using it in chowders or soups.
